Golden Egg Zucchini Muffins

For lovers of light snacks, here is a simple, quick and easy recipe that will get your taste buds wanting more.
This snack is great both hot or cold, or even frozen for a snack later on…. and
 only take about 3o Mins.

Things you will need:

1½  Zucchini’s grated

½ Carrot grated

1  Medium Onion, finely diced

¾ Cup Fresh Corn off the cob

¾ Cup grated cheese

½ Cup Self Raising Flour (or your choice of gluten free)

3  Pasture Grazed Eggs, lightly beaten

Salt & Pepper to taste

I also add chopped bacon a couple of sprigs of

parsley and a small chilli chopped.

Mix all veg ingredients & cheese together

Add flour then beaten eggs

Divide evenly into a 12 hole greased muffin pan

Bake 20 to 30 minutes at 180 degrees

Tip: Use paper cup cake holders in pan to prevent sticking
